Camp Recipes: Breakfast Burritos

POV: The first rays of sunlight start pouring through the mesh of your tent. The smell of a campfire mixes with birdsong in the fresh mountain air.

When I’m camping I love to have a quick easy breakfast option so I can get up and get out there. Other times, I really enjoy a slow morning in camp, and I’ll happily spend the morning drinking coffee and cooking.

I don’t, however, want to spend my nice slow morning in camp cleaning.

The best camp recipes are easy to make and easy to clean!

The best part about this recipe is that these breakfast burritos can be cooked ahead of time and stored in foil in the cooler, or can easily be cooked as a one-pan meal in the field.

And they’re delicious. Like seriously… delicious.

Camp Kitchen Gear You’ll Need

Step by Step Cooking Instructions

Ingredients:

  • 6 Eggs

  • Potatoes

  • Breakfast Meat (Chorizo, Sausage, Bacon, etc.)

  • Shredded Mexican Cheese

  • 1 White or Yellow Onion

  • 2 Cans Diced Green Chiles

  • 1 Can Diced Jalapeños

  • Tortillas

  • Salsa

  • Avocados

  • Olive Oil

  • 1/4 TBS Minced Garlic

  • Salt and Pepper to taste

  • 1/4 TBS Cumin

Kitchen Gear You’ll Need To Prep/Cook:

  • Cutting board

  • Knife

  • Non-stick pan with a lid

  • Wooden spoon

  • Spatula

  • Foil

  • Trash bag

  • 2 burner camp stove

Step by Step Cooking Instructions:

Start off by cutting up your potatoes. Cut them into small bite sized pieces. Make sure they’re all about the same size so they cook evenly.

Add your potatoes to the pan with a little olive oil. Mix the potatoes with salt and power, cover with a lid, and let them simmer on medium.

While your potatoes are cooking, cut up your onion. Add your onion to the potatoes.

Mix in minced garlic, diced green chiles, jalapeños, and cumin.

Cover the potatoes and onions and let them simmer on medium until the potatoes are soft. I recommend trying a few and seeing how they taste.

After your potatoes are thoroughly cooked, move them all to one side of the pan to cook your meat of choice. I would pre-cook bacon, but sausage pieces or chorizo can go straight into the pan to be cooked.

After your breakfast meat is cooked, mix it in with the potatoes, onions, and chiles.

Crack your eggs and mix them into the breakfast mix.

Stir all your ingredients until the eggs are well cooked.

Once the eggs are well cooked, cover your breakfast mix in cheese and add the cover back on.

Let it simmer on low while the cheese melts for about 5 minutes.

While your cheese is melting, heat up your tortillas on the burner. Be careful not to burn your fingers.

Once the cheese is melted, stuff a bunch of the breakfast mix into a tortilla and roll it into a burrito.

Add salsa and avocado if desired!
